The appetizer is based on various typologies of local cured pork meats and cheese, vegetables of our farm cooked in oven, au gratin or in oil and breamed bread with particular sauces.

The handmade pasta is the product of a daily constancy and patience; the seasonings are inspired by the local way of cooking: meat sauce of beef, of hare, of wild boar and season vegetables as asparagus, mushrooms, pumpkin’s flowers, etc…
